During my short pre-internship at Sheldon High School, the main class I was teaching was Health Science 20. They were in the middle of the Nutrition unit so my teaching partner and I were going to start by teaching the students about micronutrients (vitamins and minerals). Sadly we only got three lessons in before our pre-internship was interrupted by school closures due to COVID-19. Below is the 10 day plan we had come up with as well as the two lesson plans I did have the opportunity to teach.
Topic 1: Micronutrients and Health
Topic 2: Undernutrition/overnutrition and disease (anemia, scurvy, Type 2 diabetes, heart disease, cancer, rickets, osteoporosis)
Topic 3: Nutritional disorders (body dysmorphia, anorexia, bulimia, binge-eating, obesity, exercise addiction)
Topic 4: Tools for body composition (BMI, skinfold caliper, BOD POD, hydrostatic weighing, body composition analyzers, Bristol-stool chart, urinalysis)
Topic 5: Food labels to guid food choices (organic, fat free, low sodium, aspartame, energy drinks, non-GMO, additives, gluten free, caffeine, sugar, MSG…); calories, whole grain
Topic 6: Fad diets (vegetarian, vegan, keto, paleo, 100 mile diet, cleanses, fasting…); activity to tie everything together
